Pembuatan Teh Celup Kombinasi Daun Jambu Biji (Psidium Guajava) dan Daun Sirsak (Annona Muricata L.) Sebagai Antioksidan
Abstract
Antioksidan merupakan suatu senyawa yang dapat menangkap radikal bebas dengan cara reaksi oksidasi dihambat lajunya yang berfungsi untuk memberi perlindungan endogen Penelitian ini bertujuan untuk mengetahui karakteristik sediaan teh celup kombinasi daun jambu biji dan daun sirsak, dan mengetahui aktivitas antioksidan pada sediaan teh celup daun daun jambu biji, sediaan teh celup sirsak, dan sediaan kombinasi teh celup daun jambu biji dan daun sirsak. Data kadar air pada daun jambu biji 7,196% dan pada daun sirsak 7,043%. Data kadar abu total daun jambu biji 5,733% dan daun sirsak 5,933%. Data kadar abu larut dalam air didapatkan daun jambu biji sebesar 3,513% dan daun sirsak sebesar 2,842%. Data kadar abu tidak larut asam didapatkan daun jambu biji sebesar 0,43% dan daun sirsak 0,44%. Data uji pH pada seduhan teh formula 1:3 didapatkan pH 6,55; seduhan teh formula 1:1 didapatkan pH 6,21; seduhan teh formula 3:1 didapatkan pH 6,25. Hasil penelitian yang telah dilakukan didapatkan aktivitas antioksidan sediaan teh celup daun jambu biji sebesar 41,877 ppm, sediaan teh celup daun sirsak sebesar 48,759 ppm, sediaan teh celup kombinasi daun jambu biji dan daun sirsak pada perbandingan 1:3, 1:1, dan 3:1 berturut yaitu sebesar 27,214 ppm; 26,914 ppm; 23,536 ppm. Hal ini menunjukkan bahwa sediaan teh celup kombinasi daun jambu biji dan daun sirsak mempunyai aktivitas antioksidan yang sangat kuat
